I don't know if you watch Jim Sterling, so you may have already seen it, but he made a video on DSR that I found interesting.
Never been my type of game, but I enjoy Jim's commentary and opinions on games in general, and thought you might want to watch it.

Already watched it last night since it popped up on the Recommended.
I do rather agree with him on what changes could have been done, Demon Ruins/Lost Izalith as a whole is neither a fun area to go through nor look at and sadly you have to since that is where the Bed of Chaos is, and where Solaire and Siegmeyer's stories reach their end. While I think the Ash Lake is worse, being a completely unfinished area that is just one long straight line, at least that is optional.
However, I do not think they should have at least in this case. Because the game was never advertised as a whole re-imagining of the original Dark Souls. I'd absolutely love to have a version of the original since I think it is the best of the trilogy that was entirely redesigned and everything around a more fluid combat system, boss redesigns to fit that system, redesign of levels, enemy placement/design/AI, item placement yada yada. But this game was never portrayed as that, we got told it'd be the original Dark Souls just remastered and a few kinks added and that was entirely what we got.
In fact, it seems a fair disadvantage to them because they got the hype out now going from the original to the Remastered, if they started announcing they were redoing it a third time but this one would actually be an entire overhaul of the game then you'd get hype but not as much.
Tl;dr I think they could have, but I do not think they should have unless they were advertising it as an entire re-imagining of the game in which case I'd love a lot more done to it than just making Lost Izalith not so tedious to rush through.
